If you had to guess what my favorite holiday was, what would you say? If you guessed Friendsgiving then you are 100% correct. It’s not Thanksgiving…it’s FRIENDSgiving lol!
Back in 2015, I hosted my first Friendsgiving and at the time we were all into CrossFit and meal prepping so we tried to keep it simple and healthy. I discovered this fantastic Sweet Potato Mash recipe and everyone absolutely loved it. Since then, I have tried to incorporate it as a side dish when having steak and I figured it would be a great recipe to share with you all.
Of course, the thyme was grown in my backyard (can’t say the same about the sweet potatoes though). Here’s how I paired it with steak, sauteed beet greens, and mushrooms. Let me know your thoughts if you make it.

Sweet Potato Mash with Garlic & Thyme
One of my favorite versions of mashed potatoes consists of Sweet Potatoes. This was actually my friends' favorite side dish at our annual Friendsgivings and they would request it every year. I'm excited to finally share it with you guys.
Preheat the oven to 375 degrees. Peel and dice sweet potatoes into 1-inch cubes.
Toss sweet potatoes in a mixing bowl with olive oil, salt, pepper, and garlic powder and place them on a baking tray. Roast for 30 minutes or until sweet potatoes are soft.
In a small pan melt two tablespoons of butter with the smashed garlic until they're golden brown but make sure they don't burn as it can become bitter quickly.
Once the potatoes are soft, place them in the mixing bowl and add the sour cream, vegetable broth, melted butter, garlic, and with an Immersion Blender mix it all until the consistency is smooth.
Serve in a bowl and top with 1 tbs of butter and thyme.
