I just spent the last week at one of my best friend’s beach house in Panama City Beach, Florida. It’s become our annual thing to do in May every year and I couldn’t be more grateful for the time we spent gathered in the kitchen cooking together and the meals we shared over amazing conversations.
Although this trip turned rainy this year, having the beach in our backyard obviously made us crave seafood. What better way to enjoy it than by having some Ahi Tuna Poké bowls made at home.

If you're a fan of sushi, this is my go to after a long beach day. It's easy and simple to make at home and you don't need to be a sushi rolling expert. Plus, it's a lot more filling!
1/2cupLow Sodium Soy Saucecan be subtituted with Bragg Liquid Aminos
2 tbsp.grated ginger
1tsptoasted sesame oil
1cupsliced cucumbers
1cupsweet potatoesdiced and roasted
1cupjulienned carrots
1/2cupchopped scallions
1tbsp.sesame seeds
2avocadosdiced
1teaspoonSpicy MayoOptional
Instructions
Preheat oven at 350 degrees. Peel and dice the sweet potatoes into small cubes. Toss in olive oil and place on a baking sheet and roast in the oven for 25-30 minutes.
Dice your tuna and place in a bowl. Add 1/2 cup of Soy Sauce or Liquid Aminos with 2 tablespoons of grated ginger and 1 teaspoon of sesame oil. Let it sit so that the tuna soaks in the flavor.
Prepare the rice. Trader Joe's sushi rice cooks in three minutes in the microwave. Place in a bowl and add 1 tablespoon of rice vinegar and mix until it becomes evenly coated and sticks together.
Once your sweet potatoes are soft, remove from the oven, let them cool and combine with the tuna.
Build your bowl however you'd like it. Start with a bed of sushi rice, add the veggies and top it off with the tuna and sweet potatoes. Sprinkle with sesame seeds and chopped scallions.
